Allureum, a company founded by Chuck Fawcett and Daren Ulmer that aims to redefine experiential dining and entertainment, has announced that its debut venue, The Gallery, will open later this month.
The new dining and entertainment destination in Los Angeles, US, spans nearly 8,000 square feet and includes two flagship experiences: Horizon, a sophisticated bar and restaurant with a menu of wines, cocktails, and seasonal dishes, and The Gallery Theater, which will launch its first dining show, Elementa, on Friday 28 February.
Allureum is a joint venture between Fawcett and Ulmer that will own and run immersive hospitality and location-based entertainment venues across the US.

Horizon bar & restaurant
Horizon will serve a diverse selection of wines, spirits, beers, and non-alcoholic beverages, as well as a seasonal menu with snacks, sharables, and entrées created by chef Phillip Martin. Martin refined his craft at Los Angeles’ famed dining destinations, including the four-star Bazaar by José Andrés and Alma, which was crowned Best Restaurant in America by Bon Appetit.
Martin brings unmatched experience and an aptitude for crafting sophisticated yet approachable dining experiences to Horizon, honed during ten years with the Patina Group, including as an executive chef at the Walt Disney Concert Hall and the Los Angeles County Museum of Art.
Horizon’s welcoming yet elegant setting evokes modern-lux comfort, making it ideal for relaxing with friends, celebrating, or enjoying a well-crafted meal. The venue’s unique bar features a dynamic 3D cityscape with dramatic lighting and media vignettes for guests to explore.
The venue will celebrate its opening with a special Valentine’s Day weekend menu from 14 to 16 February. For $65 per person, the three-course meal includes a starter of a crisp Little Gem Caesar or Winter Chopped Kale Salad, followed by an entree of delicate Steak Au Poivre or seared Pacific King Salmon. For dessert, guests can select from White Chocolate Bread Pudding and Coconut Tapioca with passion fruit and mango.
Elementa at The Gallery Theater
On Friday 28 February, The Gallery Theater will unveil its signature dining experience, Elementa. This two-hour multi-sensory entertainment dining experience explores the five elements, Earth, Water, Air, Fire, and Aether, in five courses.
The curator will guide guests through a magnificent showcase of visual and audio talent that transforms their surroundings, from tabletops to walls to window views. Elementa is developed in collaboration with Mousetrappe Media and features cutting-edge technology that allows visitors to interact with their surroundings through responsive tabletops, establishing a dynamic and customised relationship with the performance.

Ulmer, president and creative executive of Allureum, says: “With Elementa, we wanted to create a culinary experience that transcends traditional dining and immerses guests in a world of wonder and creativity. Chef Joshua Whigham’s Elementa menu combines flavour and visual appeal. Whigham has extensive expertise in the culinary industry, having served as chef de cuisine at José Andrés’ ThinkFoodGroup restaurants, including The Bazaar in Los Angeles and Minibar in Washington, D.C., where he helped to reimagine fine dining and assisted with breakthrough concepts like Bazaar Meat and China Chilcano.
Chef Whigham’s unique menu complements the immersive storytelling experience at Elementa and includes vegan and gluten-free options.
Tickets for Elementa are now on sale.
A range of themed and live entertainment events, such as special brunches, guest chef tastings, and live music performances, will be available at The Gallery Theater outside of Elementa show hours. In addition, all of The Gallery’s spaces are bookable for private events, including business meetings, milestone celebrations, and weddings.
